A family in El Burgo
Gil Luna has been a family oil business in El Burgo since 1954. Three generations have grown up among the olive groves, the mountains and the life of the village.
Mariló Luna Escribano manages the business and Cristóbal Gil Luna continues the craft as master miller. Their story connects the Sierra de las Nieves with the oil on the table.

From the olives arriving and being washed to grinding and mixing, then decanter separation and settling in the storage tank.

The olives arrive, are weighed and prepared for grinding.

Leaves and debris are removed and the fruit is carefully washed.

The olives are ground and the paste is mixed before the oil is separated.
